Öme: Word for “two” in the ancient Aztec language.

Azteca Öme offers an unconventional dining experience and pushes the boundaries of upscale dining. From New Zealand to the World: A Culinary Journey

Born and raised in Auckland, New Zealand, my passion for cooking sparked at the tender age of 10. While most embark on their culinary journey early, I took my first professional steps at the age of 20, diving headfirst into the vibrant restaurant scene of New Zealand.

My culinary exploration soon led me across the Tasman to Australia, where I honed my skills in some of the most esteemed kitchens in Sydney and Melbourne. The experiences I gathered there shaped my craft and instilled in me a deep appreciation for excellence and innovation in the kitchen.

Relocating to the UK marked a new chapter in my career. Here, I had the privilege of working alongside some of the nation’s most celebrated chefs, including Tom Aiken and Chetan Sharma. These collaborations deepened my understanding of diverse cuisines and enriched my culinary philosophy, inspiring me to draw from the world’s many vibrant food cultures.

One cuisine that has captured my heart is Mexican food. Its connection to the land, rich heritage, and the harmony of its ingredients offer a profound insight into a culture steeped in tradition. I aim to reflect this respect for heritage in every dish I create.

At the heart of my journey is a desire to continuously learn, explore, and share my love for food—a love that transcends borders and unites people through the universal language of flavor.
